After each usage, disinfect and sanitize your wood cutting boards or butcher block countertop with full-strength white vinegar. The vinegar’s acetic acid functions as a disinfectant, eliminating dangerous bacteria such as E. coli. Staphylococcus aureus, Salmonella, and dishwashing soap should never be used since they can weaken the surface of the wood fibers. When you need to deodorize and clean your wooden cutting surface, sprinkle it with baking soda and then spritz it with undiluted white vinegar. Allow 5–10 minutes of foaming and bubbling before washing with a clean, cold towel.
